Pork Loin Chops

  with Roasted Pasilla and Mango Sauce

4 pork loin chops (boneless) at least 1" thick (6-8 oz)

Green onions chopped

Canola oil

Gecko Gary’s Sonoran Seasons™

 

Mango Sauce

4 pasilla peppers roasted, peeled, seeded and stems removed

1/2 fresh ripe mango peeled

1/2 cup canola oil

1 clove garlic

1 Tsp. Gecko Gary’s Roasted Red Pepper Hot Sauce™

Season the chops on both sides. Grill the pork chops on medium - high heat until done (approximately 20 minutes). Turn several times to avoid burning. 

In a food processor, blend the roasted peppers, hot sauce, cleaned mango and garlic. While  blending, slowly add the oil until smooth. Transfer to a sauce pan and on low heat warm the sauce five minutes. Stir frequently.

Slice the pork into ¼" slices. Spoon the sauce onto plates in a circular motion and arrange pork over the sauce in a fan pattern. Sprinkle some of the seasoning and chopped green onion around the edge of the plate and serve with baked asparagus.
